Catering or a wedding reception?

I want to have a reception with a dinner buffet with 1-2 entrees (chicken of beef nothing fancy) and 3-4 sides without dessert (wedding cake will be dessert) It will be held in birmingham alabama in Dec of next year. Does anyone have any reccomendations? Its for about 80-100 guest.

Here are some ideas:

Dinner Buffet:

1. Stuffed beef tenderloin with a cabernet sauce
2. Chicken breasts stuffed with artichoke hearts and goat cheese.
3. Rice pilaf
4. Au gratin potatos
5. Fresh green beans with slivered almonds
6. Peas and pearl onions in a cream sauce
7. Chopped salad with cranberries and pecans
8. Spinach salad with bacon dressing
9. Fresh fruit platter with a yogurt dipping sauce
10. Cheese platter with crackers and artisan breads
11. Dessert: Wedding Cake

Because you are having a wedding during the holiday season, think about keeping it simple but elegant. Consider adding a chocolate fountain for dessert as well.

Plan on 4-6 oz of meat per person. An average portion of side dishes is approximately 1/2 -3/4 cup per person. Plan on 4 people per bottle of wine. If you are having appetizers as well as dinner, plan on 3 -5 appetizers per person. And, then there’s one slice of cake per person.
